Bretta Blanc is a Wine Beer Hybrid made with Sauvignon Blanc and Chenin Blanc Hybrid beers that were created during the 2016 harvest using grapes from our very own David Walker’s Kingsley Vineyard. These two hybrids were then blended with Bretta Weisse to create what we are now calling Bretta Blanc.
With an infusion of freshly toasted coconuts and a touch of seasonal sorcery, Brewmaster Matt "Merlin" Brynildson conjures up Coconut Merlin - a uniquely flavored brew for fall and winter.
The fresh coconut addition perfectly accentuates the beer’s roasty, nutty character. The lactose gives a rounded mouthfeel & suggestion of sweetness resulting in the perfect combination of flavors in this first-time release from Firestone Walker.
Brewmaster Matt Brynildson went to the mountain and returned with a vision for a different kind of Session IPA, one that would be brewed and dry hopped with a globetrotting selection of new hop varieties from Europe, New Zealand and North America. He foresaw a beer that would deliver massive hop aromas, a signature malt balance and an empty glass before you knew what hit you. And so the newest member of our Jack IPA family was born. 4.5% ABV.
From the mind of Brewmaster Matt Brynildson comes Luponic Distortion, an ever-evolving mix of experimental hops, designed to deliver mind-blowing flavors that break the rules with each new release. 5.9% ABV.
From the coast of California comes Mind Haze, a free-spirited beer made to elevate your perceptions—juicy yet balanced, hazy yet lasting, and loaded with an imaginative array of tropical hop flavors. 6.2% ABV.
A variant from our Velvet Merkin, Molé Merkin was inspired by the traditional Mexican dish, Molé. We added dried Puya chili, cinnamon and cocoa nibs from the Dominican Republic to a Brandy barrel aged version of our Velvet Merkin. The chili adds a spicy yet approachable heat with rich dark berry fruit flavor. The addition of cocoa nibs helps balance the heat from the peppers, adding to the mouthfeel. The result is a complex yet delicate beer with flavors of earthy chili pepper, cinnamon and cocoa.
With a new ingredient and a bit of wizardry, our Velvet Merlin oatmeal stout has been transformed into a mindblowing mouthful known as Nitro Merlin Milk Stout. The new ingredient is lactose, a.k.a. milk sugar. When Velvet Merlin is brewed with milk sugar to create Nitro Merlin Milk Stout, the effect is similar to adding cream to your dark roasted coffee. The result is a stout that is still dark and roasty, but now with a mellow sweetness and added roundness of body. 5.5% ABV.
Everything we love about classic German Pilsner with a hoppy Bohemian twist. Pils is a bright straw colored lager beer with playful carbonation topped with beautiful white foam lace. Delicate lightly toasted malt flavors underscore noble German hop character. Hallertau-grown Magnum hops deliver the lupulin foundation while generous amounts of Spalter Select hops bring floral aromatic and spicy herbal notes. As a twist on the traditional Pils, we dry hop with German Saphir for a touch of bergamot zest and lemongrass. A refreshing, light-bodied and hop-driven Pils. 5.3% ABV.
Rosalie taps into our brewery’s family winemaking roots, using local wine grapes to create a delicious one-of-a-kind beer rosé with bright fruit flavors and luscious acidity. Rosalie is co-fermented with Chardonnay and other wine grape varieties harvested just miles from the brewery. We also incorporate a dash of hibiscus flower to achieve a brilliant color. 5% ABV.
Simcoe bittering hops; Centennial, Cascade and Tomahawk for flavoring; aroma hops are described as a "blend of C's." 7.5% ABV.
