Cider made from mixed varieties of cider apples: bitter, tart, sweet, bittersweet etc, according to traditional methods. Fermented in temperature-controlled wooden casks till January and February when it is repeatedly decanted between casks. Clearr, transparent, bright yellow. A complex bouquet with hints of ripened apple; good presence in the glass. Fizzy and bubbly. 6% ABV.
