Last fall we took about one hundred pounds of La Crescent grape skins directly off La Garagista’s winery’s press, hauled it back to our cidery in Vergennes, and immediately racked ~300 gallons of cider onto them. The cider consists of two varietals – Golden Russet and Esopus Spitzenburg from Sunrise Orchards in Cornwall Vt. Both apples are high acid, medium/low tannin, with great aromatic
qualities. 8.1% ABV.
