Evolution's first venture into a kettle soured beer. We chose a mash bill with over 50% wheat for a silky mouthfeel, rocky head, and a pleasant haze. Using our proprietary blend of Lactobacillus to lower the pH to a quenching but not puckering tart. The end result is a seriously refreshing beer that will have you coming back for more; and at 4.7% ABV, that’s just fine!
